Galangal root (Alpinia officinarum), also known as lesser galangal or Gao Liang Jiang, is a rhizome in the ginger family with a sharper, more citrusy, and pine-like flavor than common ginger — essential to Southeast Asian cuisine and traditional digestive formulations.
